Cooking Chicken Pibil
Pollo pibil is originally from the peninsula of yucatan and is chicken marinated with a very tasty local spice called achiote, sour orange, salt and pepper, wrapped with banana leaves and cooked originally underground but on this time we will do it oven (i have no place in my house to do it underground) but you will love the flavors, we also will do one salsa with red onions and sour orange and why not also an habanero chile salsa ¡yummy!, this is a family recipe that i want to share with you.
While we wait for the chicken to be cook in the oven I will teach you some common Mayan Phrases that we still speaking in the whole peninsula of yucatan and you can practice with any person that speaks yucatan Mayan language, (bring a notebook, pencil or pen).
Since ancient times Mayan language has represented an enormous ancestral culture and i really want you take some of our Mayan culture with you with the phrases i will teach you.
Our experience will start meeting us one to each other, I will explain you everything about the ingredients, recipe and how to cook our mayan style chicken also known as pollo pibil, everyone will be participating and having fun cooking togheter.
